“This course is aimed at all abilities; whether you're a complete novice, or an enthusiastic amateur in the world of sourdough, we'll have you mixing, shaping, and baking like a pro by the end of the course.
We'll be working as a small group so the course can move at a comfortable pace for everyone. I hope that by the end of the course everyone will have a good idea of how they can make an artisan loaf at home, as well as how to troubleshoot when things don't go as expected.
The day will start with making dough. Sourdough takes longer to rise than standard bread, so we'll need to get our dough moving as soon as possible, giving it enough time to let it rise. Then we'll grab a coffee, pull up a chair, and chat about sourdough; how it works, what's involved and why it's worth the extra time! Then it's back to our dough to work on it a little more.
The afternoon will be spent practicing shaping, we'll demonstrate and talk about the techniques required to get the optimal shape for your loaf. Then, once we're ready, we'll bake.
At the end of the course, you should have a good understanding of what goes into a loaf, as well as points to work on and what to look out for when things aren't quite working right. With these skills you should be equipped to set up your own artisan bakery at home, making as much bread as your loved ones can devour.”
You’ll take home the sourdough you’ve baked, as well as some of Luke’s sourdough starter to get you off to a flying start.
All equipment is provided. Please note - For best sourdough results a steam oven is recommended. If you do not have a steam oven Luke recommends that attendees bring their own cast iron pot, so he can demonstrate how to create the same great results at home without a steam oven.
