DAYLE HUGHES
I would describe myself as an enthusiastic and proud-to-be-Yorkshire chef with over 25 years’ experience! Classical and modern cooking are my biggest interests, combined with using the freshest seasonal ingredients. I love nothing more than creating dishes inspired by produce from our Walled Garden Vineyard, and foraging from the estate. When I’m not working, you’ll find me spending time with my family, playing my guitar or listening to music with a nice pint of bitter.
DAVID MAXEY
Working over 25 years in the industry, I’ve held posts in all areas of a professional kitchen. I’m passionate about working with fresh, home-grown and locally sourced ingredients, to produce flavourful and inspiring dishes. Coming to Carlton Towers has definitely been the highlight of my career. Gerald and Emma are a delight to work for and I’m proud to be a part of this amazing team, and I intend to be for many more years to come.
ROBERT BELLERBY
I discovered my passion for Mediterranean cooking whilst working in Prague – creating fresh pasta dishes in an Italian restaurant before moving on to cooking authentic tapas for a Spanish eatery. However, my personal love of Asian food has flourished since I committed to a vegan lifestyle. Working at Carlton Towers, with the variety of food experiences it offers, means I get to put all my skills to good use and work alongside a highly experienced team.
